Domaine de la Pépière
Location
Pépie Côt is a red “Vin de Pays” produced on the hillsidesof La Pépière village. These south-west oriented hillsides are locatedon granitic slopes where the rock, called Granite de Clisson,outcrops in many places.
Terroir
This special cuvée is produced with Côt, also named Malbecin other places. This grape variety used to grow in Nantes area’svineyard during the 20s and 30s. It has disappeared since then. Partof the vineyard of “Domaine de la Pépière” was replanted withplants coming from old vines of Clos Roche Blanche in Touraine.
Winemaking
The grapes are harvested manually at full ripening.The grapes are destemmed and in a tank for a week. A 4-day coldfermentation is carried out before maceration. Only the free-runjuices are kept for this cuvee. There is a 5-month maturation instainless steel vat.
