Domaine de la Pépière
Location
Pépie Cabernet is a red “Vin de Pays” produced on thehillsides of La Pépière village. These south west oriented hillsidesare located on granitic slopes where the rock outcrops in manyplaces.
Terroir
The cuvee is made with Cabernet Franc, a famous historicalgrape variety of the Loire Valley where it is often called “Breton”.
Winemaking
Grapes are manually harvested as they reach fullripening. The grapes are destemmed and put in tanks for a week.The fermentation is preceded by a 4-day clod maceration. Only thefree-run juices are kept for this cuvee. There is a 5-month maturingin stainless steel vats.
